Bryant University – Salmanson Dining Hall

Bryant University’s Salmanson Dining Hall within the iconic Unistructure Building had become outdated and no longer met the evolving needs of the campus community. Students faced limited food options, congested circulation patterns, and accessibility challenges that impacted their daily dining experience. The existing 25,000 sf space lacked modern amenities and efficient service areas, creating bottlenecks during peak hours and limiting the quality of campus dining expected at a premier university.

The comprehensive renovation transformed the dining hall into a state-of-the-art culinary destination spanning approximately 30,000 sf across two levels. A striking new circulation addition on the south elevation features a grand stair, new mezzanine level, elevator, and an impressive 1,000 sf two-story entryway with curtain wall that dramatically enhances functionality and visual appeal. The modern servery offers expanded and diverse food options, while back-of-house improvements include a full kitchen, automated dishwashing line, loading dock, and refrigerated storage spaces.

Completed in August 2025, the renovation significantly enhances the student experience by providing a modern, accessible dining environment that fosters community and social interaction. Students benefit from improved traffic flow, reduced wait times, and a wider variety of high-quality dining options accommodating diverse dietary preferences. Staff now work in improved spaces with better equipment for receiving and storing provisions, enhanced cooking and washing facilities, and centralized offices supporting daily operations.
